We are very careful with the temperature in which our products are stored. We feel it is very important to maintain top quality fresh products. Some food companies store their food products in a regular warehouse where temperatures in the summer can range from 90 degrees and above, which can degrade the quality of heat-sensitive, enzymatic, raw food. This is why we store your products in an environmentally controlled, well sealed room and routinely check the inventory for quality.

Source and Processing

The craft of salt-making has remained essentially unchanged since prehistoric times, until Hawaii Kai invented "Solar Seal."

Ocean water evaporated in the open air...a fine way to make sea salt, if the water and air are free from pollution. Unfortunately, that's hardly the case, which points to the dilemma faced by modern salt makers.

It takes many weeks to evaporate large quantities of ocean water, which itself is laden with organic and man-made pollutants. During the drying period, the water is exposed to additional pollutants-dust, ash, pollen, bird droppings, acid rain, insects-falling in to the crystallizing salt.

To purify air-dried salt, it has to be boiled and refined, which destroys the essential trace minerals, leaving only sodium chloride. Alternatively, if the salt isn't boiled and refined, the consumer has to accept the water- and air-borne pollutants that inevitably end up in "gourmet" salt.

But the problem goes deeper than that. Consider the main gourmet salt categories, Fleur de Sel and Celtic Gray.

Fleur de Sel means "Flower of the Salt"-the first sodium crystals that appear on the surface as the sea water evaporates. Processors of "Fleur de Sel" skim off these first sodium crystals and dry them in open-air beds, leaving behind the bounty of minerals and elements that evaporate more slowly and are essential for healthy, savory sea salt.

In making Celtic Gray, the "Fleur de Sel" is not skimmed (an attempt to capture more of the mineral spectrum). But after the long open-air drying period, the salt has to be raked out of the large clay pans, so a lot of clay is harvested as well. The resulting salt is dull gray in color because of the soil included in the salt.

Enter "Solar Seal"the future of salt-making, only from Hawaii Kai (HK).

HK established the proprietary Solar Seal system at its main production facility, located on the tranquil and unspoiled Hawaiian island of Molokai. During the entire "closed matrix" Solar Seal process, the source water and the salt it yields are completely protected from the elements and touch only food-grade materials.

How is it done?

HK starts with Molokai Sea water-tested to be as clean as any on earth-and filter it via reverse osmosis to FDA bottled-water standards.
The purified "source water" is then routed into a revolutionary Solar Seal Reduction Unit (SSRU), which, utilizing a suite of patented technologies, concentrates the salinity to six times normal.
The concentrated "source water" is then fed into an extensive, inter-linked array of Solar Seal Evaporators (SSE)-food-grade pans with tightly sealed glass tops-for final evaporation and eventual harvest.

The Result:

"Soul of the Sea- white "whole salt" of incomparable purity and flavor, an ideal pH balance of 9.37, undamaged from super-heating. Soul of the Sea contains just 84% sodium chloride, with the remaining 16% comprised of 80 naturally occurring trace minerals and electrolytes.
"Ocean Essence"-a highly concentrated, mineral-rich tonic yielded in small amounts during the final drying process.
Pure, de-salinated, delicious drinking water.
There are no Crustacean Allergens detected in the base white sea salts, as determined by ELISA testing for tropomyosin protein.

The Final Product

Palm Island Premium salt is then blended in a special formula with Soul of the Sea and Molokai Ocean Essence, which locks in the natural flavor complexities, electrolytes, and trace minerals.

For the Red Gold Salt, a proprietary, low-temperature system is used to bond the finest available Hawaiian Red Alaea Clay to the salt, imparting a glorious color, along with a uniquely zesty flavor.

For the Bamboo Jade Salt, a proprietary, low-temperature system is used to bond certified organic, raw and vegan bamboo leaf extract from southern China, imparting a delightful "nose", making it perfect for all types of vegetables and Asian-influenced cuisine.

Compare it to any other specialty salt and you will be amazed at the difference in taste, texture, and moisture.

Source and Processing

A product of India, our Stevia is made from the whole leaves of the Stevia herb. Once the leaves are collected, they are low-temperature dried and milled into a fine powder at low temperatures to protect the nutrients of the plant. The milling process rarely gets above 100 degrees. Our Stevia is 100% organic, vegan, kosher, gluten-free and raw.

Benefits

As a sweetener, Stevia is best for people with blood sugar issues or desire to the lower the glycemic index of their diet. Because the human body does not metabolize the sweet glycosides (they pass right through the normal elimination channels) from the leaf, the body obtains no calories from Stevia. Processed forms of pure Stevia can be 70-400 times sweeter than sugar. It also inhibits the growth and reproduction of some bacteria and other infectious organisms, including the bacteria that cause tooth decay and gum disease. This may help explain why users of Stevia enhanced products report a lower incidence of colds and flu and why it has such exceptional qualities when used as a mouthwash or added to toothpaste.

Stevia is an exceptional aid in weight loss and weight management because it contains no calories and reduces one's craving for sweets and fatty foods. Preliminary research data indicates that Stevia may actually reset the hunger mechanism in people where the pathway between the hypothalamus and the stomach has become obstructed. 6 tbsp raw, organic yacon powder

2.5 tsp ground sea salt
optional for thickness: 1 tsp psyllium husk
1/2 cup of water
1/3 cup of olive oil
1/4 cup of raw, organic coconut vinegar
1/2 cup fresh squeezed lemon juice (about 2 medium lemons)

Preparation

Mix all ingredients in a bowl and serve!
For a thicker more flavorful sauce, make the day before and store covered in the refrigerator.

Description: This is a satisfying vegetable soup that is made in a snap with your blender.

Servings: 4 servings

Special Equipment

Thermometer (to ensure the soup stays below 118F)
Powerful Blender (we recommend BlendTec)

Ingredients

1 medium organic red/yellow bell pepper (cored & chopped)
1 medium organic cucumber (chopped)
1 small organic zucchini (chopped)
1 stalk organic celery (chopped)
2 stalks organic green onion (chopped)
1 clove organic garlic
1 handful organic spinach leaves
8 organic cherry tomatoes
1 cup of water
2 tbsp organic lemon juice
1 tbsp nutritional flakes
1 tbsp organic olive oil
1 tsp organic coconut oil
1 tsp sea salt
Optional: 1/4 tsp organic cayenne
Garnish: green onion, Rawmesan, chopped tomato

Preparation

Place all ingredients (except garnish) in blender.
Blend at highest speed for 45 seconds.
To Warm Soup, blend a second and third time.
Serve in bowls and garnish with the green onion, Rawmesan and chopped tomato.

Description: This is a raw, dairy-free, creamed spinach dip sure to delight all. It is loaded with spinach and has a delicious creamy taste. Serve with flax crackers or cut veggies. You may just be tempted to make it a meal!

Special Equipment

Blendtec Blender (click here if you need one)

Ingredients

10oz of Fresh, Organic Spinach
1/2 Organic Red Onion
1.5 cups organic, unpasteurized almonds (soaked and dehydrated)
0.5 cups organic, really raw cashews (soaked and dehydrated)
0.25 cups of organic, cold-pressed olive oil
1.5 cups water
1/3 cup of fresh-squeezed lemon juice
2 TBSP Nutritional Flakes
4 garlic cloves
2 tsp sea salt
Optional: 1 tsp of psyllim husk (increases thickness of dip)

Preparation

Chop spinach and red onion and place in mixing bowl.
Put remaining ingredients in blender and blend until smooth.
Combine blender contents in bowl and mix.
Chill for 1-2 hours to increase the dips thickness.
Garnish with chopped red bell pepper for color.
